This is a question that I have heard so many times, at least since I started serving guests in a restaurant in Switzerland. The question always made me stop and think.

You would say that this should be easy to answer, but for me it is an answer that requires many aspects examined within the parameter of the time when the question is asked. Then it is a question of mood, what I feel like eating at the present time, and what I had just before. Overall, you have the usual suspects like Brie and Comté, or even some blue cheese, something strong or goaty. Being French I tend to not cook with cheese, and this means that many products are not considered to answer the question. Then, depending on what I am doing, I can feel like exploring something exiting or going back to a sure value.
Which means that for you, you can try out and find your new favourite cheese. However, to achieve this you will need to try your local cheesemonger and explore the shop and its selection. It is even better if you can find more than one as they all have their best product depending on their selection. This is overall a question of taste and feeling, and everybody is different, which is a good thing. You will have as well your preferred cheese at different time of the year vary, and then you will explore a bit more and find alternatives.
So, the next time you ask the question, remember that there is no right or expected answer, just a recommendation depending on the selection and moment.
